HUMUS X HORTENSE is a plant-based fine dining restaurant conceived from a desire to change the food system through the senses and with sustainability in mind.
The botanical tasting menu resonates with the rhythm of 24 micro seasons and it changes every week depending on the harvest of the wild farm Le Monde de Mille Couleurs.
The restaurant strives for the highest quality of ingredients and at the same time the lowest food waste thanks to ancient conservation techniques and zero-waste cocktails.
Already in 2008, the visionary culinary couple Caroline Baerten and Nicolas Decloedt has started the concept of ‘botanical gastronomy’.
After all these years of pioneering in sustainable gastronomy, the restaurant humus x hortense is awarded by Michelin Guide with a Michelin Green Star.
Nicolas Decloedt is voted as the ‘Best Vegetable Chef’ by the renowned culinary guide Gault & Millau (15/20). And on top of that, the restaurant has received the title of the ‘Best Vegan Restaurant of the World’ in 2019 and listed in the Top 10 of Best Vegetables Restaurants by We’re Smart Green Guide.
